Clear Soup with Mushroom Noodles

This recipe is perfect for sustaining nutrients while also trying to slim down. When I modeled, I would eat this for two days leading up to a runway show and drink lots of water. This is not intended for long-term use, but is great when needed a little gut reset and if you struggle with leaky gut syndrome. You can make it with or without protein, but I prefer to add cooked salad shrimp to help with protein but you can make it without if you are vegan or fully vegetarian.

Ingredients:

2-3 Cartons Chicken or Vegetable Broth

1 White Onion Chopped Roughly

Finely Chopped Green Onion

Finely Sliced Button Mushrooms

2 Cloves Minced Garlic

Sesame Oil

Tamari or Soy Sauce

Shirataki Mushroom Noodles or Miracle Noodles

What To Do:

  1. Start by adding caramelizing the onions in a little sesame oil in the bottom of your stock pot. Add the minced garlic and cook.
  2. Add your broth and roughly cut onion to a pot. Bring to a simmer for about 20-30 minutes, then strain.
  3. Return broth to pot and add mushroom noodles, cooked salad shrimp, green onions and mushrooms.
  4. Serve hot and store for up to two days in the refrigerator.
